Pomona Pectin is a citrus-based pectin, and the important thing about that is that it requires a much lower amount of sugar to thicken your jellies and jams. It also makes a lot more jelly than your typical box of powdered pectin.
Regular fruit pectin requires your jam or jelly to be 55-85% sugar. Pomona Pectin uses pure citrus pectin, with no dextrose or preservatives. Its jelling power is activated by calcium which is included in each box, not by your sugar content. You can use Pomona Pectin for: jam, jelly, or freezer jam. This allows your product to be sweetened to your taste using any kind of sweetener: sugar, honey, agave, xylitol, fruit juice concentrate, stevia, or anything you prefer to use. 1 box of pectin can make up to 22 half-pint jars of product.
This summer, when you are getting ready to start canning up your bounty of fruits and produce, think about using Pomona Pectin. You can check out their website that has recipes, videos, and FAQs!
